I found a very simple recipe for vegetable fritters and amended it. It was a big hit with my boys. These fritters can also be frozen, however they didn't last long here! They're so easy for babies and toddlers to pick up and handle in order to feed themselves, ideal if you're following Baby Led Weaning (BLW) or beginning to explore finger foods. The recipe is below.
You will need:
A few florets of broccoli
A few florets of cauliflower
A small amount of grated cheese (I use cheddar or tiny cubes of halloumi)
One egg
3 tablespoons of self raising flour
A little black pepper
A drizzle of olive oil
Instructions:
1. Chop the vegetables into florets and par boil them (approximately 10 minutes in boiling water)
2. Allow the vegetables to cool.
3. Grate a little cheese, mix with egg, black pepper and the flour.
4. Chop the vegetables more finely and add to the wet mixture.
5. Ensure that your pan is hot and place mounds of the mixture into the pan; you'll likely get around 5.
6. Cook on a high heat for around 2 minutes and turn over for another 2 minutes.
7. Allow to cool and serve.
